Hawaiian Luau Huli Huli Chicken

Hawaiian Luau Ingredients:

* 4-5 lbs chicken pieces
* 1/3 cup ketchup
* 1/3 cup soy sauce
* 1/2 cup brown sugar
* 3 tablespoons sherry
* 1 piece ginger root, crushed
* 1 clove garlic, crushed

Hawaiian Luau Preparation:

Combine ketchup, soy sauce, brown sugar, sherry, ginger root, and garlic. Stir well.

Place chicken, skin side up, on the rack of broiler pan about 6 inches from the heat or preferably on an outdoor grill.

Baste the chicken frequently and continue broiling or grilling for about 10 minutes on each side or until chicken appears done.

Hawaiian Luau Aloha Sweet Potatoes

Hawaiian Luau Aloha Sweet Potatoes

* 4 to 5 medium sweet potatoes
* 1/2 cup butter
* 1 cup brown sugar
* 1/2 cup water
* 1/4 cup shredded coconut

Boil sweet potatoes in their jackets until tender, about 25 minutes. Let cool, then peel and cut into
slices 1 1/2-inch thick. In a large skillet melt butter. Stir in brown sugar and water and cook on medium heat about 5 minutes. Reduce heat and add sweet potatoes to skillet. Cook gently; tossing lightly until sweet potatoes are glazed. Sprinkle with coconut before serving. Makes 8 servings.

Note: Canned yams can be used in place of sweet potatoes.

Hawaiian Luau Ingredients:

* 1 1/2 pounds spareribs
* 1/4 cup brown sugar
* 2 tablespoons red bean curd sauce
* 1/4 cup honey
* 1/2 teaspoon five spice powder
* 1 teaspoon salt
* 2 tablespoons sherry or whiskey
* 1 teaspoon red food coloring
* 1 clove garlic, crushed

Hawaiian Luau Instructions:

Prepare a marinade by combining all of the ingredients except the spareribs themselves. Marinate the spareribs 12-24 hours, turning the ribs over several times.

About an hour before serving, bake spareribs at 325 degrees. After a half hour, turn and baste the spareribs. Continue cooking for about another half hour or until spareribs reach an internal temperature of 155°F to 160°F.
